Cucumber and Tomato Salad

Restaurant Marrakesh, Morocco Pavilion, EPCOT

Serves: 4

1 cucumber, peeled and diced
2 tomatoes, diced
2 tablespoons red onion, finely chopped
1 heaping teaspoon fresh parsley, finely chopped
1 heaping teaspoon fresh cilantro, finely chopped
2 tablespoons olive oil
2 tablespoons white vinegar
1 teaspoon cumin
pinch of white pepper
salt, to taste
2 cups mixed greens

Mix all ingredients except greens in a large bowl and combine well. Season with salt to taste.  Serve over the greens.
