Oven Baked Caprino Cheese

Mama Melrose's Ristorante Italiano, Hollywood Studios

3/4 cup tomato basil sauce
8 each slices of bread
2 tablespoons caprino cheese

Place 6 ounces of tomato basil sauce in heat proof bowl and place caprino cheese in center and bake in oven for 2 to 4 minutes at 350 degrees. Garnish with assorted crostini.

Tomato Basil Sauce:
1 1/2 large onions, 1/4 inch diced
4 tablespoons olive oil
1/2 tablespoon oregano, dried
1/2 tablespoon kosher salt
16 ounces crushed tomatoes
1 can tomato paste
1/8 cup minced garlic
4 tablespoons basil, chopped
1/2 tablespoon marjoram, dried
1/4 tablespoon fresh ground black pepper
16 ounces diced tomatoes

In a 2 quart saucepan heat the olive oil, add the garlic and onions stirring constantly until garlic and onion has a nice aroma and is starting to turn golden brown. Add the basil and the herbs and salt and pepper and cook for 5 minutes, the add the tomato paste. Cook for 5 more minutes. Add all other ingredients and combine. Bring to a boil. Cook over medium heat for 5 hours, stirring regularly so that you do not burn the sides of the kettle.  

Note:  If you cannot find Caprino cheese you can substitute any other Italian cheeses.
