House Salad 

with Citrus Vinaigrette Dressing

Brown Derby House, Hollywood Studios

Yield: 2-4 servings                                              

2 cups fresh baby greens
4-6 leaves Boston Bibb lettuce
2-4  leaves radicchio
4 leaves Belgian endive
3 plum tomatoes, cut in half
8 thin slices, English cucumber
4-6 kalamata olives
red onions, thinly shaved, to taste
baby carrots, thinly julienned, to taste

Citrus Vinaigrette Dressing:
juice of half a lemon
juice of half an orange
juice of 1/4 lime
1 tablespoon balsamic vinegar
apple cider vinegar
1/2 tablespoon Dijon mustard
1/2 cup extra virgin olive oil
1/2 cup salad oil
lemon zest
orange zest
lime zest
salt or pepper

Salad:  Combine all ingredients in a bowl. Toss with the vinaigrette before serving.

Vinaigrette:  In a measuring cup, combine all the juices and balsamic vinegar. Add enough apple cider vinegar to measure 1/2 cup.  Pour into mixing bowl or blender with mustard. Slowly incorporate oils while mixing. At the zests, and season with salt and pepper.
