Boma: Hummus



White Bean Hummus

Boma - Flavors of Africa, Disney's  Animal Kingdom Lodge

Yield: 20 servings

32 ounces chickpeas, canned, drained, and rinsed
5 tablespoons tahini, mix well
2 tablespoons roasted garlic
10 lemons, juiced
1 teaspoon fresh garlic
salt and pepper

Place the chickpeas in a food processor. Puree. Add the tahini, both garlics, and half the lemon juice. Mix. Adjust lemon juice and finish with salt and pepper.

Black Olive or Sun Dried Tomato Hummus


1 can garbanzo beans, drained and rinsed
2  tablespoons tahini
2 tablespoons olive oil
2 tablespoons lemon juice
1/2 cup pitted black olives or sun dried tomatoes
pinch of salt
fresh ground pepper to taste

Put all ingredients into a food processor and process until smooth, scraping the bowl down occasionally. The hummus can be thinned with water if necessary. All amounts can and should be adjusted to suit your own taste!

Serve drizzled with a bit of olive oil and a sprinkling of chopped olives, if desired. Serve with pita, crackers, corn chips or it can be used as a sandwich spread.
