Boma: Cured Pork Loin



Cured Pork Loin

Boma - Flavors of Africa,  Animal Kingdom Lodge

Yield:  8 servings

3 1/3 pounds pork loin
1/2 cup kosher salt
1/2 cup sugar
1 cup brown sugar
2 tablespoons minced herb (thyme or rosemary), chopped fine
2 tablespoons ginger, fresh and chopped
2 tablespoons cinnamon
ground black pepper, to taste

In a small bowl, mix all the ingredients except the pork. Rub the mixture into the pork and let marinade overnight. Cook in the oven at 350 degrees for one hour or until done.
