1900 Park Fare: Creamed Spinach



Creamed Spinach

1900 Park Fare, Grand Floridian Resort 

Yield:  2 1/2 cups

2 tablespoons olive oil
3/4 cup finely diced yellow onion
2 tsp minced garlic
2 (10 oz.) packages frozen chopped spinach, thawed and drained well
1 cup heavy cream
1/2 cup grated Parmesan cheese
kosher salt and black pepper to taste

Heat the oil in a saute pan over medium heat. Add the onion and garlic and sauté until they are translucent. Mix in the spinach. Mix in the cream and Parmesan cheese and bring to a simmer. Salt and pepper to taste.
